Red salad with breaded Graviera bites and paprika sauce

2 radicchios

150gr beetroot leaves

10 radishes

600gr Gravieraki Kalogeraki

1 cup of baked & salted hazels coarsely chopped

1 egg

Flour for all purposes

Extra virgin olive oil


For the sauce:

200gr “Prince” Dessert Kalogeraki (with yoghurt culture)

1 spoon full smoked paprika

1 spoon full white vinegar

Salt, pepper

Put radicchios in a bowl, cut in thick pieces, as well as beetroot leaves and radishes sliced fine and then in each one in two pieces.

In another bowl add flour and in separate bowls too the egg beaten and the hazels.

Cut Gravieraki Kalogeraki in sticks and then immerse each stick firstly in flour, then in egg and lastly in hazels (so that each graviera stick is fully covered). Put sticks on greaseproof paper in a baking pan.

Bake in a pre-heated oven in 180 C (on air) for 10 min.

In the meantime we prepare the sauce by mixing all ingredients together in a bowl.

Add a bit of olive oil in salads, the sauce as well as the baked graviera sticks on top (hot).

Serve directly, mix all ingredients and enjoy!
