Watermelon salad with Traditionally Cretan Cheese & honey

INGREDIENTS

1kg watermelon without the seeds

400gr Traditionally Cretan Cheese Kalogeraki

10-12 radishes

50gr sesame

50gr black sesame

2 spoonfuls honey

80ml extra virgin olive oil

2 spoonfuls lemon juice

1 cup fresh mint finely chopped

salt, pepper

IMPLEMENTATION

Cut watermelon in round slices and then each round slice in 8 triangles. Cut the rind.

Cut Traditionally Cretan Cheese Kalogeraki in triangles too.

 In a bowl add the honey. In another the sesames mixed.

Coat the cheese triangles with the honey and then dip them in sesames to cover them. Put each triangle in a pan with greaseproof paper.

Fridge the cheese triangles for 30'.

Folowing, take off the fridge and bake in 180C for around 15-20'.

In a big salad bowl add the watermelon triangles, radishes chopped finely and spingle with mint dressing (which you'll prepare by whisking olive oil, lemon juice, salt, pepper and the fresh mint). Taste the dressing and add salt if needed.

On top add the cheese triangles and serve directly to keep the ingredients fresh. Enjoy with a few fresh mint leaves on top!
