Mediterannean pasta with Cretan Graviera P.D.O. 7 months Matured

Ingredients

1 pack of the pasta you prefer (for the recipe we used papardelle)

100gr Cretan Graviera P.D.O. 7 months Matured Kalogeraki

1 onion chopped

1 red pepper chopped

10 dried tomatoes chopped in cubes

100gr  black olives sliced

1 tea spoon oregano

Salt and pepper

Olive oil

A few leaves of parsley chopped

Implementation

Boil pasta in salted water according to pack instructions. Before you strain , keep aside a cup of their water.

In a big pan, saute the olive oil, in medium temperature, the onion and the red pepper until they soften. Add the dried tomatoes, the olives and continue for 1-2 min more. Add the oregano, the pepper as well as the cup of water (from spaghetti).

Add in the pan the pasta as well  as the Cretan Graviera P.D.O. 7 months Matured Kalogeraki grated and continuously stir until the Cretan graviera melts and creates a smooth thick sauce.

Serve hot with the chopped parsley and a bit of Cretan graviera.

Tips:

  • Do not overboil the pasta as cooking continues in the pan and might soften too much.
