"Agnopites" (traditional pies) with Cretan Xynomyzithra P.D.O.

Ingredients:

500gr flour

7gr yeast

250gr water

50gr olive oil

1 shot raki

1 teaspoon sugar

½ teaspoon salt

200-250gr Cretan Xynomyzithra P.D.O. Kalogeraki

Olive oil or sunflower oil for frying

Implementation:

In a bowl mix water, yeast and sugar, stir and rest for 10 minutes until it bubles. Add flour, olive oil, raki , salt and knead until you have a soft, smooth dough.

Cover with a napkin or film and rest for 1 hour until it doubles.

Split the dough in 15 equal parts and create small balls. Mold each one in round shape (12cm approx.)  Add in the center 1 teaspoon Cretan Xynomyzithra P.D.O. Kalogeraki and fold the dough carefully to cover it fully. Press softly each one on top and lean them on greasproof paper. 

On medium to high temperature heat a pan with approx. 1cm olive oil or sunflower oil.  As soon as the oil is hot, fry for 2 min. each side until they get a nice, gold color. Leave on absorbent paper until you serve them.

Tips:

  • You may serve with honey
  • You might need to add extra flour or water, depending on the flour you will choose to use
  • Important: Fry in very hot pan otherwise the pies will absorb too much oil
