Red Velvet Pancakes with Sweet Myzythra and strawberries

Ingredients

For the pancakes:

2 cups Flour for all purposes

1 spoon full baking powder

3 eggs

1 cup sour milk full fat

1 cup milk cream 35% fat

2 tea spoons red pastry color

¼ cup of sugar

1 tea spoon salt

1 spoon full bitter cocoa powder

½ cup melted butter

For the cream:

650gr Sweet Myzythra Kalogeraki

300gr milk cream 35% fat

200gr sugar milk

2 vanillas’ (powder)

For the strawberries:

800gr strawberries

4 spoon full sugar

2 raki shots

Zest from 1 lemon

Implementation

Add the washed strawberries (cut in two or as is depending on their size) in a pyrex (pan). Springle with sugar, add the raki shots, the lemon zest and bake on air in 180C for about 30 min to soften.

Prepare in a bowl the pancake mixture. Add all solid ingredients, separate the yolk from the eggs and whisk the whites to get fluffy. Add the liquid ingredients in another bowl together with the yolks and stir with an egg beater. Then mix with the solid ingredients. Stir well and then add gradually the beaten whites slowly in order to preserve the fluffy texture. Put the mixture in fridge for half an hour (alternatively, prepare the mixture the previous day and keep it in fridge covered with a membrane.).

Prepare the cream. In a bowl put the Sweet Myzythra Kalogeraki grated, add the milk cream, the sugar milk and vanillas and whisk in mixer until you get a smooth cream.

Put a greaseproof pan on medium fire, a bit of butter and add spoon full of the pancake’s mixture. Bake for 2-3 min each side of the pancake.

Serve on a platter with the sweet myzythra cream on top, the strawberries and their syrup. Enjoy!
