Baked Cheesecake with Sweet Myzithra

For the base:
120gr crushed cinnamon cookies
70gr melted butter
1 tbsp. brown sugar

For the cream:
400gr Sweet Myzithra Kalogeraki
50ml milk
120gr powdered sugar
3 eggs
1 tbsp. all-purpose flour
¼ tsp. salt
1 vanillin capsule

For serving:


For the base:
Mix the cookies with the sugar and the butter. Apply this mixture at the bottom of your vessel and place it in the freezer.

*Make sure the vessel you 'll use will be around 22 cm.

For the cream:
Mix Sweet Mizithra Kalogeraki with the milk and the vanilla by using a mixer for 6-7 minutes.
Add the eggs one by one and then add the powdered sugar, the salt and the flour, and keep on mixing for 1-2 minutes.
Pure the mixture in the form and bake at 175°C for 40-45 minutes.
Leave the cheesecake aside so it will be completely cool and then remove it from the mold and serve it with honey.

Tips: We can add a little lemon or orange zest to the mixture.
          We can bake the cheesecake in a bain marie to make it even more creamy.
