Ingredients
350 g Cretan Xynomyzithra P.D.O. Kalogeraki
350 g flour for all uses
70 ml of raki
170 ml of water
1 ½ table spoons olive oil
1 pinch of salt
For serving:
Honey
Implementation
In a bowl, mix the water, raki, olive oil, salt and gradually add the flour. Knead into a ball and cover it.
I shape Cretan Xinomyzithra P.D.O. Kalogeraki by squeezing it into 8 balls and I put them aside.
On a floured surface I open the dough in a sausage, I cut it first in the middle and then each half in 4, creating a total of 8 equal pieces. I shape them into balls, put them back in the bowl and cover them with a towel. I take a ball of dough one by one, open it with my hands in a diameter of 8-10 cm, place the ball of xinomyzithra in the middle and close it well with the dough (so that the cheese is not visible).
First on a floured surface with your hands and on the Then with the rolling pin I open the dough in a round shape, gradually, thin as much as possible in a diameter of 20 cm. one by one, baking the pies on both sides for about 3-4 minutes / side. One by one I transfer it to the plate and continue with the next one.
Serve hot or cold with honey on top.
Tips: When I open the pies thin with the xynomizithra inside, I can store them in the freezer. Then I fry them normally when I need them.
