Panna Cotta with Sweet Myzithra

Ingredients:

400 gr. milk

200 gr. whipping cream

300 gr. Fresh myzithra

100 gr. honey

1 vanilla

10 gr. gelatin sheets

300 gr. apricots

50 gr. Honey

Implementation:

In a saucepan over medium heat, heat the milk, cream and honey until it starts to steam. Soak the gelatin leaves in a bowl of ice water. Once the milk mixture is warm enough, drain the gelatin sheets with your hands and add them to the mixture. Mix well. Transfer the mixture to a blender, add the fresh myzithra and grind very well. Transfer the mixture to individual molds and refrigerate for at least 4 hours.

For the sauce:

Put the apricots cut in four together with the honey, a little water, and boil for 5-7 minutes until a nice sauce is created.

For serving:

Immerse the molds in hot water for a few seconds and turn over on a plate. Add the sauce on top.

Tips:  For extra freshness we can serve with a fresh apricot. Serve immediately from the fridge because due to the heat the panna cotta can easily start to melt.
