Grilled Lamb with Cretan Graviera PDO

Ingredients

2.5-3 kg lamb leg

2 garlics

4 rosemary sprigs

300gr Cretan Graviera PDO KALOGERAKI

50ml olive oil

100ml red wine

Oregano

Salt & Pepper

 

Implementation

Wash the lamb very well and dry it with absorbent paper. Pour the olive oil and spread it with your hands. Add salt, pepper and oregano so that it goes everywhere.

Cut the Cretan Graviera PDO Kalogeraki into small pieces. With a sharp knife, create slits and hide in each one some garlic and the Graviera pieces. At this step you will use 100g of the Graviera.

In a hull, spread the rosemary sprigs and place the lamb on top. Pour over the wine and close it. In case we do not have a hull, we can use an oven pan and we can close it with parchment paper first and then with aluminum foil.

Bake in a preheated oven with resistance at 200 degrees for 2 hours. 10 minutes before removing it from the oven, remove the lid, place the remaining pieces of the Graviera around the lamb and let it melt for you!
