Cookies with Sweet Myzithra and lemon

200gr flour for all purposes

200gr Sweet Myzithra Kalogeraki

180gr sugar

1 big egg

60ml olive oil

40ml fresh lemon juice

1 full spoon lemon zest

1 tea spoon baking powder

½ tea spoon baking soda

½ salt

1 vanillin capsule

30 whole pealed almonds



Mix in a bowl olive oil, sugar, vanillin, egg, salt and whisk until the mixture becomes fluffy.

Add the lemon zest, the juice and Sweet Myzithra Kalogeraki crumbled very well.

In another bowl put the flour, baking powder, baking soda and add it in the previous mixture. Knead for 1-2 minutes.

Mold the dough in small balls (size of a small walnut).

Put the small balls on a baking tray adding a whole pealed almond (press it on the dough).

Bake the cookies in 170C for 18-20min.


Instead of lemon you may use cinnamon or orange.
