Cake with Sweet Myzithra and red fruits
250 gr. Sweet Myzithra Kalogeraki
180 gr. flour for all uses
200 gr. sugar
75 gr. butter, at room temperature
2 tbsp. lemon zest
2 tbsp. fresh lemon juice
2 tbsp. baking powder
¼ teaspoon salt
2 vanillin capsules
100 gr. frozen red fruits
In a bowl, mix the milk with the lemon.In another bowl, add the flour, sugar, baking powder and salt and mix with the whisk.
the bowl of the mixer, beat the Sweet Myzithra Kalogeraki for 3 ', add one by one the eggs, the butter, the lemon zest and the vanilla, continuing the beating until the mixture gets a creamy texture. Alternately add the flour and milk in 3 portions, stirring with quick movements and finally add the frozen red fruits.
Transfer the mixture to a non-stick pan 20-22 cm or mold and bake for 50-60 minutes at 180o C.
Leave the cake to cool, unmold it and serve with a little powdered sugar.
Tips: Make sure that the frozen red fruits are not thawed.
