Risotto with vegetables and Graviera light

Ingredients

200gr arborio rice
4 white mushrooms, cut into slices
1 red pepper, cut into cubes
1 zucchini, cut into cubes
1 tbsp. corn
1 onion, chopped
1 garlic clove, finely chopped
750ml hot vegetable broth
40ml olive oil
½ tsp lemon zest
100gr Graviera light Kalogeraki
Freshly ground pepper
Salt


Implementation

Heat the olive oil in a deep frying pan and add the onion and the garlic. After 2' add the rice with the vegetables and wait for another 1'.
Then, add the vegetable broth in small quantities while stirring constantly with a wooden spoon.
Add as much salt as you want and when the risotto is ready, remove the pan and add the grated Graviera light.
Serve the risotto with fresh herbs.


Tips: We can use any seasonal vegetables.
