Pasta with vegetables and Grated Dry Anthotyros

Ingredients

300 g of moderate barley
150 g Grated Dry Anthotyros Kalogeraki
1 onion
1 clove of garlic
100 g mushrooms
100 g of celery
1 leek
1 red pepper
1 orange pepper
1 teaspoon tomato paste
1000 ml hot vegetable broth
2 tablespoons of olive oil
1 tablespoon of butter
¼ teaspoon of thyme
½ teaspoon sweet paprika sweet
Freshly ground pepper
Salt

Implementation


Cut the onion and garlic, slicing the mushrooms and peppers, chop the leeks and celery and finally cut the zucchini into grams.

On a deep frying pan, cook all the vegetables with olive oil on high heat.

In another pan, pour 1 tablespoon of olive oil, put the barley and saute it for 1 minute until it is polished. Then pour it into the deep frying pan with the vegetables.

Add to this tomato paste, herbs, pepper and salt.

Begin gradually to pour the broth, in small quantities, stirring continuously until the barley is cooked.

Once you finish, remove the heat and add the butter. Mix well and serve in a deep dish and put on the top a bunch of Grated Dry Anthotyros Kalogeraki.
