Cretan shakshuka with Traditionally Cretan Cheese

Ingredients:

5 diced ripe tomatoes

1 diced red pepper

1 diced green pepper

1 onion, finely chopped

Olive oil

Salt and pepper

1 teaspoon oregano

150 gr. Traditionally Cretan cheese

4 eggs

⅕ of a bunch of chopped parsley

 

Implementation:

 

Sauté the onion and peppers in a pan on high heat for a few minutes until it gets soft. Add the tomatoes, salt & pepper, oregano, parsley, reduce the temperature, cover and cook for 15 minutes until the liquids in the pan are reduced. Break the eggs one by one first in a small bowl. With a spoon make small puddles in the sauce and pour in each egg. Cover again and leave it for another 7-10 minutes until the egg white is cooked. Remove it from heat, add the Traditionally Cretan cheese and a little more parsley.

 

Tips: Serve with fresh bread, optionally toasted. If you want, add some red pepper flakes at the end.
