Warm salad with couscous vegetables and Sour Myzithra

Ingredients

For the salad
150 g couscous
150 g Sour Myzithra Kalogeraki
100 g of sweet potato
100 g of celery
1 red pepper
1 courgette
1 pomegranate
1 tablespoon of pine nuts
1 tablespoon of black currants
½ teaspoon turmeric

For dressing
4 tablespoons of parsley
4 tablespoons of coriander
2 tablespoons of mint or mint
1 clove of garlic
30 ml. vinegar white balsamic
50 ml. olive oil
Freshly ground pepper

Method

Boil the couscous in 250 ml of water along with turmeric.

When it is ready, pull out it of the fire, sprinkle some olive oil and keep it warm.

On a moulti, grind all the dressing ingredients until the mixture becomes homogeneous.

Then chop the sweet potatoes in cubes and boil until it is tender.

Cut zucchini, celery and pepper into cubes and make them sauté with some olive oil. Then add the sweet potato, pine nut, raisins, 2-3 tablespoons of dressing and mix all of them thoroughly.

Pull out of the fire the ingredients and then put them into a large bowl. Mix them with couscous, the rest of the dressing and the mizithra crushed.

Garnish with pomegranate and serve the salad warm!


Tips:

  • You can use pligouri insted of couscous!
