Pancakes with sweet Myzithra and sweet preserved sour cherries

200 gr. sweet Myzithra Kalogeraki
200 gr. all-purpose flour
2 eggs
240ml milk
40 gr. melted butter 
1 tbsp. lemon juice
1 tbsp. sugar
1 tbsp. baking powder
½ teaspoon baking soda
¼ teaspoon salt

For serving:

Sweet preserved sour cherries
Sweet mizithra Kalogeraki


Mix the milk with the eggs and the sugar in a bowl and add the flour, the salt and the baking soda. Mix them well.

Add the butter, the lemon and the sweet mizithra and leave the mixture aside for 10-15 minutes.

Heat a non-stick frying pan, grease it with a brush and pour in one tablespoon of the mixture.

Bake the pancakes on both sides until they turn brown and puffy.

Serve the pancakes with sweet preserved sour cherries and sweet mizithra.

Tips: We can add some lemon zest or vanilla to the pancakes.
