Paella with shrimps, sausages, beans and Anthotyro

Ingredients


250 gr. arborio rice or carolina
10 shrimps
10 slices of spicy sausage
150 gr. beans, cut into medium pieces
1 pepper, finely chopped
1 onion, finely chopped
2 cloves garlic, finely chopped
1 tbsp. smoked paprika
50ml white wine
2 tomatoes, grated
a pinch of saffron
3 tbsp. parsley, finely chopped
50 ml olive oil
800ml water
Freshly ground pepper
Salt


Implementation

Cut the shrimps' heads and boil them with water, then filter the broth and keep it.

Put the saffron in the wine.

In a large deep frying pan add 2 tbsp. of olive oil and once it's hot add the onion, the garlic, the beans and a pinch of pepper. Cook it for 2-3 ’.

Add the rice, the paprika and sausagea and stir for a few minutes. Then add the wine and go on with low-temperature cooking.

Add the broth, the tomatoes, the rest of the olive oil, salt & pepper and cover ithe pan with a lid.

Continue low-heat cooking without stirring and in about half an hour and the shrimps. Remove it when it's ready!


Tips:
We can also add chicken or peas to our paella.
